Super simple, healthier, vegan, gluten free, Mint Cao Cheesecake with Strawberries (longest name ever!)

Serves 10 For the base: 100g pecans 120g cashews 120g dates (soaked to rehydrate if needed) For the filling: 1 can of coconut milk 300g of cashew nuts (soaked for an hour) 5 tablespoons of Mint Cao 40g coconut oil 75g raw cacao powder 25g coconut sugar To decorate: Half a punnet of strawberries Sip with: A glass of sticky pudding wine! To make the base, blend all the ingredients together in a blender and press into a loose bottomed cake tin.  Pop it in the fridge while you make the filling. Place all the ingredients into the food processor (discard the water from the cashews) and wiz until you get a thick, rich mixture.  Spoon on to the base...

Malt Cao Blueberry Muffins

These are great little muffins and they're not too sweet so you could enjoy them as a treat for breakfast.  They are suitable for vegans and are a really wholesome way of fruity bake! Makes 8 muffins Ingredients 200g Spelt or buckwheat flour 1 teaspoon of baking powder 3 tablespoons of coconut sugar 2 tablespoons of coconut oil 125g blueberries 100ml of unsweetened almond milk 1 heaped tablespoon of Malt Cao Preheat the oven to 180C/gas 4.Line a muffin tin with cases.Mix together the flour, baking powder and coconut sugar in a bowl.Melt the coconut oil in a small saucepan.Once melted add the blueberries, Malt Cao and almond milk.Mix well and spoon the mixture into the muffin cases.Bake in the...

Malt Cao and Oat Protein Smoothie (post workout)

This is a great post workout smoothie, full of protein from the hemp powder, nut butter, almond milk and seeds and plenty of carbohydrate to reenergise you! Protein intake is important when exercising, particularly if weight training is part of your workout. Malt Cao & Pecan Chocolate Cupcakes

Makes 12 Cakes Ingredients: 260g Spelt flour (or rice flour if needed) 60g raw cacao powder ½ tsp bicarbonate of soda 1 tsp baking powder 250g natural yogurt (or coconut if vegan) 100g coconut sugar 100g almond milk 1 tsp of vanilla extract 1 tsp apple cider vinegar Malt Cao A handful of pecans, chopped Method:Preheat the oven to 180C/350F/gas mark 4. Mint Iced Cacao, Oat & Raisin Cookies

Makes 16 Cakes Ingredients: 150g oats 75g raisins 50g ground almonds 200g apple puree 5 tablespoons of maple syrup 1 tablespoon of tahini 1 tablespoon of raw cacao 60g Cacao nibs Mint Cao Method:Preheat the oven to 170CLine a baking tray with baking parchmentMix all the ingredients together in one bowl to form a sticky mixture.Use a tablespoon to scoop the mixture into a ball and on to the baking tray. Press down on the ball to flatten a little.
