Pumpkin Pancakes

I hate waste, so it's always good to come up with lots of ways to use up the pumpkins after Halloween and pancakes are always a winner.  Savoury goodies would be equally as delicious as fruit on top.  We enjoyed them with stewed apples-the perfect Autumn breakfast! Serves 4-6 Ingredients 2000g mix of wholemeal and white plain flour Pinch of salt 1 teaspoon of baking powder 1 tablespoon of mixed ground seeds or any ground seeds of your choice 180ml milk 1 large egg 3 tablespoons of pumpkin puree Rapeseed oil to fry. Baked Orange Cao Chocolate Mousse

A great Christmas time recipe with the Orange from the Cao, but to be honest, it would be a hit at any time of year! Makes: 6 individual puddings or one large. 4 tablespoons of Orange Cao 3 large eggs separated 30g of coconut sugar (of caster) Heat the oven to 180C/Gas mark 4. Let the Orange Cao down with a little hot water to make it pourable.  Allow to cool and then stir in the egg yolks with a wooden spoon. In a large bowl, whisk the egg whites to stiff peak stage. Fold the chocolate mixture into the egg whites gently to avoid knocking the air out. Spoon into individual oven proof dishes and bake for around 15...

Malt Cao No Bake Flapjack

These are the quickest and easiest treats ever but taste is definitely not compromised! Makes 6 little bars. 115g oats 25g mixed ground seeds 50g raisins 50g coconut oil melted 2 tablespoons of Malt Cao (or whichever flavour your favour) Throw the oats, seeds and raisins into a mixing bowl. Melt the coconut oil in the heatproof bowl in the microwave and stir in the Cao. Add the Cao and oil to the mixing bowl, stir until combined and spoon into a small baking tray.  Pop in the fridge and allow to set for about half an hour. Cut into slices and share-you will be the most popular person around!

Charlie's Malt Cao Tarte Tatin

This was made by my eight year old, who followed a Michel Roux recipe and adapted it.  He was so pleased with himself and we were all delighted with the result!   Serves 6 Packet of puff pastry (Life is too short to make puff pastry!) Approximately 800g of Apples (he used a mix of eaters and cookers because that's what we had at home) 50g Coconut sugar 1 heaped teaspoon of Malt Cao 60g Butter, chilled and cubed Roll the pastry to a 3mm-thick round on a lightly floured surface and cut a 24cm circle, using a plate as a guide. Malt Cao Melting Middle Cupcakes

Malt Cao Melting Middle Cupcakes These are a real treat but simple to make-basically the perfect recipe!  The mx makes approximately 15 cakes depending on how big you make them.  I used Malt and Classic Cao in this recipe but any of the flavours would work well, so have fun experimenting. 5-6tbsp Water (boiling) 40g raw cacao powder 3 Eggs 175g Butter (unsalted) (softened) 155g Unrefined golden caster sugar 115g Wholemeal Self-raising flour or spelt flour 1 tsp Baking powder To decorate: Malt Cao Classic Cao Hot water Preheat the oven to 200°C (400°F, Gas mark 6) Line a muffin tin with cases.
