Vegan (rustic) Cao DodgersOur take on the after school treat of the 80’s, a more natural and more delicious treat!

Makes 12 Biscuits


  • Cao
  • 260g of spelt flour (or flour of your choice)
  • 65g ground almonds
  • 45g of flaxseeds
  • ½ teaspoon of cinnamon
  • Pinch of salt
  • 125ml coconut oil
  • 75ml maple syrup

Preheat the oven to 170C and line two trays with baking parchment. 

Mix the flour, ground almonds, flaxseeds, baking powder, salt and cinnamon together.

In a separate bowl mix the melted coconut oil and maple syrup and combine with the dry bowl to create a dough. 

On a lightly floured surface roll out the dough to a thickness of approximately 5cm.  Use a round cutter to cut out the biscuits and then use a small cutter to cut a circle in the middle of half of the biscuits.  Use a flat or pallet knife to place them on the baking tray.

Pop in the oven for approximately 12-14 minutes and then put them on a wire rack to cool.  When completely cool spread the Cao of your choice on to each of the uncut biscuits and then put it’s ‘lid’ on. 

Perfect with a glass of milk or chilled Cao as a little tea time feast!
