Malt Cao Blueberry Muffins

Malt Cao Blueberry Muffins
These are great little muffins and they're not too sweet so you could enjoy them as a treat for breakfast.  They are suitable for vegans and are a really wholesome way of fruity bake!
Makes 8 muffins
  • 200g Spelt or buckwheat flour
  • 1 teaspoon of baking powder
  • 3 tablespoons of coconut sugar
  • 2 tablespoons of coconut oil
  • 125g blueberries
  • 100ml of unsweetened almond milk
  • 1 heaped tablespoon of Malt Cao
Preheat the oven to 180C/gas 4.
Line a muffin tin with cases.
Mix together the flour, baking powder and coconut sugar in a bowl.
Melt the coconut oil in a small saucepan.
Once melted add the blueberries, Malt Cao and almond milk.
Mix well and spoon the mixture into the muffin cases.
Bake in the oven for between 20-25 minutes, until a skewer come out clean.
Leave to cool on a wire rack or eat them warm.
