CAO VICTORIA SPONGE


Made by my wonderful mother, this was truly scrumptious!

 

225g softened butter

225g wholemeal self raising flour

175g caster or coconut sugar

1 tsp baking powder

4 large eggs

2 tbsp of Cao mixed with 3 tbsp of hot water

Filling - Jam and whipped cream or butter cream etc.

 

Grease 2 x 8 inch sandwich tins

Put all ingredients into machine or beat with wooden spoon until smooth and blended.

Divide mixture between tins and level the tops.

Cook at 180C or 160 in fan oven or gas mark 4 for about 25 minutes

Leave to cool then cool on wire rack.

When completely cool, fill with 4 tbsp jam and whipped cream.

Dust with caster sugar.
